Country Apple Pie

Ready in 45 minutes

Serves 8 people

Ingredients

Dough:

  • 2 ½ cups All Purpose Flour

  • ¼ cup granulated sugar

  • 1 ¼ stick cold salted butter

  • 1 egg 

  • ¼ cup ice water

    Filling:

  • 5-6 Granny Smith apples sliced

  • 1 cup packed brown sugar 

  • 1.5 tsp Cinnamon

  • 1//2 cup granulated sugar

  • ¼ cup cornstarch

  • Pinch of Cardamom just for funsies

    For the Dough:

  1. Pour flour and ¼ cup granulated sugar (and pinch of salt if using unsalted butter)  in bowl

  2. Cube butter and add into flour mixture

  3. Dig hands into the mixture and squish each cube of butter between your 

  4. You want some large flat       pieces of butter in there! Yes, a lot of it will crumble but you’ll get some good hunks in there, too.

  5. Make a well in the middle of the flour mixture and pour a little bit of the ice water.  From the edge of the bowl, reach in with yours hands and toss and the mixture until the water incorporates

  6.  Form into a ball, wrap in plastic, and refrigerate at least 30 minutes

  7.  Preheat oven to 375 degrees f


For the filling:

  1. Peel (if you should feel the need) and slice 5-6 apples, depending on the size of your dish and how high you want this pie!

  2.  Toss in a bowl with 1 cup packed brown sugar, ½ cup granulated sugar, 1.5 tsp cinnamon, (throw in a pinch of cardamom if you’re feelin’ wild on this fine day), ¼ cup cornstarch.

  3. Make sure it is thoroughly mixed - set in fridge


Preparation:

  1. Flour your countertop and rolling pin

  2. Cut chilled dough in half

  3. Roll out first section to ¼ inch - you should see those big chunks of butter flattened in the dough, this will make some nice flaky layers!
    -Don’t let the dough stick to the counter. Flip and add more flour if necessary

  4. Set in pie dish, poke holes with a fork on the bottom crust, set in fridge

  5. Roll out the next section to the same ¼ inch and set aside

  6. Get apples and pie dish from the fridge and evenly fill the bottom crust,  cover with the rest of the dough

  7. I waste no dough because it’s my favorite part so i just fold the extra bits behind the edges of the bottom crust but you do you, baby. 

  8. Make a little X cut in the middle with a sharp knife and a few slits around that.

  9. Brush beaten egg over the crust and sprinkle with ¼ cup granulated sugar

  10. Bake at 375 for 45 minutes

    Now you can eat the entire pie on your own if you so wish. Or you can share with friends and family just to hear the praise.  Bring one to a new neighbor to break the ice because you absolutely have to be friends with someone that bakes you an entire apple pie

    Only good things can come from making this pie.

Enjoy warm with hoe’made whipped cream or vanilla ice cream (The true King of ice cream flavors, don’t fight me).
