Brown Butter 

Chocolate Chip Cookies


Ingredients:

  • 2.5 Cups All Purpose Flour
  • 2 Eggs
  • 1.5 Cups packed Brown Sugar
  • 1 Cup Granulated Sugar
  • 1.5 Sticks Salted Butter
  • 1 Tbls Baking Powder
  • 1.5 Cups Chocolate Chips
  • 1 tsp Vanilla Extract
  • 1 tsp Almost Extract





These cookies are so lovely, soft and chewy

For the dough:  

  1. Brown the butter on medium heat until it smells nutty and is a cute deep golden color, about ten minutes
  2. Cool butter briefly and then cream together with sugar
  3. Add in vanilla and almond extracts
  4. Beat in eggs one at a time
  5. Combine baking powder and flour
  6. Mix into the wet mixture until just combined, do NOT over mix
  7. Fold in 1 cup of the chocolate chips
  8. Chill in fridge for 20 minutes
Preheat oven to 350 degrees 



                                                             Preparation:

  1. Using a cookie scoop or teaspoon, whatever y'all got handy, roll into one inch balls
  2. Press one side into the remaining chocolate chips just for funsies
  3. Cover your cookie sheet with parchment and place cookies 3 inches apart
  4. Bake until the bottoms look golden and the tops look ever so slightly undercooked, about 10-12 minutes depending on your oven, this will assure you have a soft and chewy cookie
  5. Place on cooling rack or plate or clean cutting board, you know, whatever y'all got and let sit for 20 minutes. 
                                                                        Enjoy!!! I do recommend eating one or two while they're still warm and gooey just because life is short and you need to enjoy these small magic moments while you have them. Eat warm cookies with hot coffee and sit next to whichever window in your home that lets in the nicest light. Let the shadows and golden sun do what they do, let them fall and take notice of what you see. Eat the cookies. Drink the coffee. Small magic is what keeps you going every day.
